What is a vegan?
Someone who abstains from all animal products (meat, fish fowl, dairy, eggs and all animal by-products such as rennet & gelatin).

Why would I choose a vegan baked good over a traditional one?
Vegan baked goods are cholesterol and lactose-free, and they have lower levels of saturated fat. Plus, they can be just as tasty (if not tastier!).

Do you use any refined sugars?
We do not add any refined sugars to our products, however the chocolate we use does contain some refined sugar. (chocolate is a high quality dark Belgian chocolate with 56% cocoa solids).

What type of fat do you use?
We only use sunflower oil, which is a light tasting oil, with no GMOs , no trans-fats, and low levels of saturated fat.

What are trans-fats and do you use them?
Trans fats result from a chemical process called hydrogenation, which changes a liquid oil, naturally high in unsaturated fatty acids, to a more solid and more saturated form. The greater the degree of hydrogenation, the more saturated the fat becomes. All of our products are 100% non-hydrogenated and trans-fat free.

What are GMOs (genetically modified organisms)?
GMOs are created by combining genes from organisms such as bacteria, viruses or animals with other, often unrelated, species. This creates new organisms that would never occur in nature, creating new and unpredictable risks to people's health and the environment. In Canada, up to 70 percent of the processed foods found in grocery stores contain GMOs. The government requires no long term testing of GMOs, so it's impossible to determine what effects they are having. The most common GMOs are found in products containing corn, soy, and canola. We do not use canola or corn, and the soy products we use are organic and do not contain GMOs.

Can organic ingredients be genetically modified?
No.

Why eat organic?
Organic refers to methods of growing and processing foods that rely on the earth's natural resources rather than synthetic fertilizers & pesticides. Pests and weeds are managed using earth-friendly means such as beneficial insects and mechanical controls.

Do you use organic ingredients?
About 50% of our ingredients are organic - all our flours, grains, sugars and produce are organic, but most of the other ingredients we use are still too expensive at this time. Our goal is to eventually become a completely organic bakery.

Where are you located & can I order from you directly?
We work out of a commercial space with no storefront and are not open to the public. We distribute mostly through natural food stores and restaurants throughout the GTA, but we do sell directly to the public for catering and special occasion cakes. Contact us for details.

Do you use wheat flour?
We use wheat flour in our cakes only (chocolate & carrot). All of our other products are wheat free. Any of our cakes can be made with spelt at an additional cost (one week's notice required).

Which products are made with spelt?
Chocolate chunk cookies, double chocolate chunk cookies, oatmeal raisin cookies, spiced nut biscotti.

What is spelt?
Spelt is an ancient grain that is a relative of wheat. It is more easily digestible by some people who cannot tolerate wheat.

Do you use nuts?
Several of our products contain nuts. Any product that does not contain nuts may have come into contact with them.

Do you use any artificial colours, flavours or preservatives?
No.
